A roast date on a bag is only meaningful if the roasting behind it is real and regular. This is how the coffee gets from green bean to the dates shown on the coffee list.

Sourcing
Green beans are bought by origin and lot, then cupped before a bean goes on the roast schedule.

Roasting
Each lot is roasted to a profile suited to its processing method, on the days listed in the roast schedule.

Listing
The roast date is added to the coffee list the same day a batch comes off the roaster.
