  1. Sourcing

    Green beans bought in small lots, by origin.

  2. Roasting

    Roasted in small batches, sized to that week's orders.

  3. Resting

    Beans rest for [resting time — TBC] before they're sold.

  4. Packing

    Each bag is packed and dated by hand.
